BEER
Organising our beer list: a controversial subject. After much deliberation, countless straw-polls, a hastily organised caucus and the penning of several haunting protest songs, we decided to group our beer collection into broad style categories. These are not designed to be compliant with the BJCP (Beer Judge Certification Program) style guidelines but an indication of the style you can expect, interspersed with occasional tasting notes & anecdotes of questionable veracity.

To’Ol Considered Concentrations 440ml 3.9% Denmark 25.00
Petite Saison open-fermented with fresh Elderflowers, conditioned in stainless-steel and blended with ex-Chardonnay barrel-aged Saison.
Omnipollo Noa Pecan Mudcake 330ml 11% Sweden 11.50
Noa Pecan Mudcake is firmly a dessert beer. Not necessarily a beer to be enjoyed with dessert, but a beer to be enjoyed as dessert. This is as close to liquid mudcake as things get. Though oddly the very chocolate-y, cloyingly sweet taste manages to hide the pecan of the title as well as the 11% ABV
Dot Brewing Farmhouse ale w/ Limoncello cubes 330ml 7% Ireland 8.00
A pale farmhouse ale aged in white wine barrels, transferred to stainless and rested on a bed of 10 year old zesty limoncello chestnut cubes.
Dot Brewing Pale Ale Aged in Sauternes Barrels 330ml 6.2% Ireland 8.00
A bright pale ale aged in French Oak Sauternes barrels for 6 months. Bright vinous aromas with gooseberry and peach with a light French Oak and Rye spice.
Dry & Bitter Oculus Orbis DIPA 440ml 8.4% Denmark 10.00
The third instalment of The Voyage Within series has a hit of El Dorado and Citra in the whirlpool, which is intensified by a double dry-hop of Strata, Galaxy and Mosaic. Notes of heavy pineapple and candied fruit give you visions of tangy tropical sweets.
De Ranke, XXX Bitter 750ml 8.5% Belgium 22.50
XXX-Bitter is a variation on the existing XX-bitter, where an additional 50% more hops is added. Full-bodied bitter beer.
Dot Brewing Stacked Barrel Aged Peated Stout 330ml 8.2% Ireland 9.50
A Foreign Extra Stout aged in Irish Peat Single Malt ex Bourbon barrels for 6 months. A light wood fire smokey character with underlying chocolate/coffee biscuit & vanilla flavours.
Dot Brewing 4 yr old Barrel Aged Wild Raspberry 375ml 7.2% Ireland 17.50
A light crisp ale aged in bourbon barrels for 4 years, transferred to stainless with 200 litres of raspberries for 2 months blended back with 4 month old barrel aged pale ale.
O'Brother Opus One Whiskey BA Imp Stout 440ml Can 12.5% Ireland 10
Imperial Stout aged in Fercullen 18 year old single malt and 8 year old single grain whiskey barrels.
Porterhouse Around the Clock Imp Stout 330ml 12%. Ireland 12.00
A mash bill of seven different malts complimented by seven separate hop additions, brewed continuously over the space of 24 hours. A whole day’s brewing resulted in an immense concentration of malt flavours. The resulting beer was matured in freshly emptied bourbon and sherry casks from the Dingle whiskey distillery. The outcome is a rich smooth dark Imperial Stout.
De Glazen Toren Canaster Winterscotch Ale 750ml 8.7%. Belgium 15.50
The winter seasonal from De Glazen Toren, this ale is rich in chocolate and roasted flavors. Full-bodied and dark. A perfect winter warmer.
De Glazen Toren Canaster Lentebier 750ml 9%. Belgium 15.50
Traditionally a lent beer, “lentebier,” would have been brewed by monks as a stronger beer to provide some extra nutrition during the 40 day fasting period between Ash Wednesday and Easter Sunday. This special version of their standard Saison is double hopped in the boil and has a late addition of hop flowers grown locally in the Aalst region of Belgium.
De Glazen Toren Canaster Cuvee Angelique 750ml 8.3%. Belgium 15.50
A Belgian Strong Ale that pours dark amber with red highlights and a fluffy off-white head.
Aromas include candied fruits, caramel, yeast, and hoppy citrus with notes of almond, pepper, mild spice and apricot. Taste follows the nose but includes lingering notes of raisin and other dark fruits as well as coffee, bread, molasses and red wine. Lively carbonation helps support a smooth and medium-bodied mouthfeel and the impressive 8.3% ABV is remarkably well-hidden. The finish is long and dry with a touch of bitterness.

Dark Ale w Ginger & Lime Aged in Rum Barrels
Dead Centre Brewing is Westmeaths only craft brewery. Tirf3cta is their 3rd anniversary beer. This unique Irish Ale was brewed with root ginger and lime zest before being aged in fresh empty run barrels.
Whiplash Temporary Pleasure 440ml DIPA 8.0% Ireland 8.5
A big, super dank DIPA that hits all the senses! Big nose of mango and a touch of lime & pineapple following through on the flavour with gentle herbal note on the very end.

Imperial Black IPA with Coffee, roasty and salty, whats not to love?!
Lervig From Norway With Love 13.3% Norway 25
Bourbon barrel-aged salted peanut imp stout
A velvety imperial stout poured into freshly emptied bourbon barrels. After 14 months, they pulled the beer and added over a quarter-tonne of peanuts. A touch of salt provides the perfect balance to the sweet and savory roasted-nut flavor, while the bourbon gives finishing notes of vanilla, oak and caramel.
Lervig Stoutella 13% Norway 25
Bourbon barrel-aged chocolate hazelnut imp stout.
The rich flavour of hazelnuts floods your palate first. After that a tsunami of sweetness coats your entire mouth and leaves your toes curling with pleasure. Finally, a gentle wave of chocolate washes over your tastebuds, and warming notes of bourbon from 13 months of barrel aging leave a last lingering touch.
Lervig Off The Rack 13.2% Norway 25
Barrel ged imp stout in Australian rum barrels.
Off the Rack: Australian Dark Rum 2021 is a blend of one imperial stout base with deep chocolate, vanilla and caramel notes, and another imperial stout base to balance out the blend with toasted booziness and a light peppery bitterness. Each base had 12 months on dark rum barrels, and the wood imparted charred oak, coconut and treacle with the faintest hint of ester-driven banana bread.
Lervig Coconut Coffee Stout 12.8% Norway 25
Bourbon & rum barrel aged imp stout
This beer is defined by a natural marriage of coconut, rum and bourbon which produce aromas of coconut cream pie. The finish has a boozy edge which is softened by vanilla-forward sweetness and oak lactones from both the coconut and 14 months in bourbon & rum barrels
Whiplash Spectral Frequency Double IPA 8.3% Ireland 8.50
The nose is unmistakably DANK. If you don’t like Columbus, move on please. It’s playing here with all the ripe tangerine of Amarillo and heavy floral power of Centennial but the flavour and body gives way to the stone fruit and citrus with complementary herbal and oily goodness.

Barrelhead Brewery, Hopburgh Helles 4.7% Ireland 7.80
INDIA PALE ALE:
Hopped up version of the Pale Ale style, the addition of hops here adds a dry finish with grapefruit like pithiness. Allegedly the style developed when extra hops were added to sustain the freshness of British beer on its carriage across the water to India. ‘Unlikely’, say most beer experts. Delicious nonetheless.

PALE ALE:
Typically lighter coloured ales; range from gentle citrus notes to dense orangey malts.

Dungarvan Greenway Waterford PA 4.5% Ireland 6.80
WHEAT BEER:
Created using predominantly malted wheat, this style lends itself to flavours of banana, bubble-gum, and is frequently typified by the cloudy, suspended yeast haziness.

Blonde Ale:
One of the most approachable styles, a golden or blonde ale is an easy-drinking beer that is visually appealing and has no particularly dominating malt or hop characteristics. Rounded and smooth.

SAISON:
Pale Ale that is highly carbonated, fruity, spicy and often bottled conditioned. It was historically brewed with low alcohol levels, but modern productions of the style have moderate to high levels of alcohol.

Slightly spicy and sometimes dry, tends to have a sharp edge and crisp, distinctive flavour, usually in the finish.
