The Vexed Question of Spelling (or ‘To e or not to e’)
Wherever possible when describing individual whiskeys, we will cleave to the spelling that the producer has adopted: we are happy to keep the ‘e’, drop the ‘e’, or even add an extra ‘e’ or other vowel altogether. However, when referring to whiskey in general we have decided to keep the ‘e’. It is a style decision, much like our affection for the Oxford comma and gets us an extra letter score when we play Scrabble.
The List
In the beginning we stocked every whiskey we could get our hot little paws on. Over time however, we whittled the collection down to our favourites, then expanded across the shelves as we tasted new whiskeys we loved and revisited long forgotten favourites. We carry a broad range of whiskeys from classic examples of styles to experimental misfits. We hope you find something you love.

Classic Irish nose of honey, yoghurt, spiced, rich on juicy summer fruits and pine oil.
Bushmills Malaga 1995 €50 Limited edition rare and non-chill filtered whiskey, bottled at cask strength and finished in Malaga casks for 14 years. Technical descriptors aside, this whiskey is a cracker. It is bursting with aromas of dates, brown sugar and freshly brewed coffee. The palate is all about the fruit, with apples, guava and cherries all making an appearance before petering out to a lasting breathy finish.

Finished in a Bordeaux cask, this is a bar-exclusive whiskey from Clonakilty. Tastes of Sweet, spicy raspberry jam with a hint of their signature salt.

Dingle is a microdistillery based in Kerry. Their outturn is very small, producing only four casks a day. This one is a staff favourite!

Crisp oak meets soft vanilla on the nose, balanced by the signature apples of Greenspot. On the palate, pot still spices give way to orchard fruit, citrus and berries with a toasted oak finish.

Partially matured in casks that were used to mature a barrel aged stout.Coffee, dark cocoa, charred oak, almond paste, burnt butterscotch.
Jameson Caskmates IPA €6.90
Aged in IPA barrels, there are immediate rich floral aromas which eventually give way to juicy grapefruit. As expected, everything associate with IPA is apparent on the palate. Citrus, hops and a touch of bitterness.
Jameson Crested €6.50
Combination of bourbon and sherry casks, hints of melon and ginger. Toasted wood, fruit, spicy and chocolate notes.
Kilbeggan 21 Year Old €17 Grain forward to start and then easing into some gently berry and spice notes.

Lambay island is a quirky private island off the coast of Dublin. It is home to some beautiful Edwin Lutyens designed architecture, a colony of wallabies and now, a whiskey maturation warehouse. Lambay whiskeys are finished in cognac barrels and it lends a salty richness to the whiskeys.

Method and Madness Single Grain Spanish Oak 15.50 Notes of new pencil shavings, rose petals and fresh rain on pine. On the palate, warm toasted oak and grapefruit with a slightly spicy finish.
Method and Madness Single Malt Limousin Oak Cask 16.50 French oak adds floral aromatics while bourbon barrels add nuttiness. Vibrant peach and melon follow. On the palate are softer fruits with flavours of honey and cinnamon toast

Natterjack €8.80 Named for Ireland’s only native toad who walks, rather than hops. This is a really accessible whiskey, with lots of citrus and creamy spice on the palate. Great with sparkling water. 2205

Tipperary Boutique Distillery is one of our favourite distilleries. They are a tiny farm to glass operation headed up by Jennifer Nickerson who ashewed a life in accountancy to focus on distilling, maturing and bottling whiskey. The ex-sherry octaves is exclusive to L. Mulligan. Grocer and while it is young, this brings with it a vibrancy and warming spice. Add a drop of water to open it up!

The Gang from the Liberties
The Liberties area of Dublin was once the beating heart of Ireland’s urban distilling tradition. The area lay silent for years, before some plucky young distilleries set to breathing new life back into the stills. Distilleries include Pearse Lyons, Liberties Distillery, Teeling and Roe & Co.

A blend of Irish grain and malt whiskeys that have been married in rum casks before bottling at 46%.Vanilla, with brown sugar sweetness and almond skins.
Teeling Pot Still € 9
Carefully crafted using a recipe of 50% unmalted spring barley and 50% malted barley which has then been triple distilled and matured in a combination of virgin oak, ex-wine and ex-bourbon barrels.

Lemon cake and salt spray linger beneath the characteristic smoke of Octomore. Peaches, apricot, melon and ginger syrup follow on the palate, scattered amidst the smoke.
